The origins of these drinks date back to the end of the 19th century, when in Sicily the “bibitari” (also known as “cioscari”), who were the ancient kiosk operators, competed in their traditional kiosks, which over time became an integral part of the urban architecture and a meeting point for those seeking refreshment, to create new thirst-quenching drinks with an original flavour, based on soda water, fruit syrup and lemon juice, jealously guarded recipes and artisan procedures.
